There’s a new update from the owner of the Stromberg-Hoffman Building in downtown Georgetown. We are sad to announce that the folks who were planning to open The Well have backed out. Higher costs and unexpected construction delays were sited as the reason we won’t be sipping whiskey at this location as anticipated.
We spoke with Karl Meixsell, the owner of the building today 2/21/18 and he confirms that The Well (scheduled to open in the downstairs area) and Palomar Coworking (scheduled to open upstairs) have both backed out. We will be checking back with him soon for news of new tenants for the building that will be ready by late March.
The work goes on in the space and it will be beautiful, someone will enjoy opening some wonderful businesses! Can’t wait to see what the wind brings us…
Updates – There’s a new establishment coming to Georgetown. It’s called The Well Food Wine Whiskey. It’s going to be located on the corner, just next to the Williamson Museum on the west side of the Georgetown Square.
Updated February 20, 2018 – Our friend Rudy Ximenez of RSX Studios took this picture. It’s the 2nd floor of the Stromberg-Hoffman Bldg. still under remodel construction. This is located above The Well’s soon-to-be location and the future home of Palomar Coworking.
January 2018 – We spoke with Karl Meixsell, the owner of the building today and he is expecting to have the ‘shell’ of the building done by end of February, then he will turn it over to the tenants. And, that the final build-out by the tenants should be completed in 90 to 120 days.
That puts the opening at early July or August of this year. These dates are dependent on the weather.
Mr. Meixsell also confirmed that the building needs a new high pressure gas line, and that this has been approved by the city. At this time nobody knows when this work will be completed. If the Well opens before the gas line is installed in the building they would offer a limited menu.

Updated 10/3/17 – Due to construction delays, the Well’s opening has been pushed back a bit. Owners, Scott & Wendy Weir, have their liquor permits and are finishing their drawings for more permits at this time. Word is that January is a realistic target for opening! ~from the Sun
Updated 7/17/17 -Ken and I were on the Georgetown Square this week and the workers were inside the future location for the Well. It’s coming along, the huge space now has the large dirt moving equipment inside and neighboring businesses say the work is proceeding slowly. From the look of things it may be a while before the much awaited Food, Wine and Whiskey is ready for us to enjoy!
From the Wilco Sun – Houston restaurateurs Scott and Wendy Weir plan to open The Well on the Georgetown Square October 2017 at 718 South Austin Avenue, Georgetown.
The building located on the corner next door to the Williamson Museum was built in 1855 and features vaulted ceilings, roof-top access, original cream stone walls and an active well inside.
Their focus will be on whiskey with a huge list of 60 to 80 bottles. They intend to also build a large wine program with international wines. The food will include appetizers and meals like grilled artichokes, spinach dip, sliders, steaks and hamburgers.
The Well’s atmosphere will be “speakeasy” in the front with low seating and couches and a bar with tall tables clustered around and a dining area toward the back; with the well as the focus.
The Weirs are thinking industrial comfortable style using leather, iron and wood to complement the features of the 19th century building. The plan is to have capacity for around 200 and they expect to employ around 40 people.
